Crock Pot Lover

Yes, I LLLOOOOVVVVEEEEE crock pots. Almost a little unnaturally I admit. I have 7 of the delightful gems. Nothing pleases me more than to throw a bunch of stuff into one of my precious little friends, wait 8-10 hours and PRESTO!!!! A delicious meal with little or no mess. Through the years I have been fortunate enough to procure many different styles, colors and sizes of my pots. I guess you could say I am some what of a crock pot collector. I really have an unusual obsession with them. I have cooked everything in them from soups and stews to baked potatoes. Since we got our camper, I have even invented some recipes. I am sure that I am not the only one to ever fix this but I did modify it for my crock pot. One of my favorites is as follows: Beef Pepper Steak

3 lbs of thin cut steak
3 bell peppers seeded
2 yellow onions
1 bottle of Lite soy sauce ( I have high blood pressure so this cuts down on sodium)
4 tbs of cornstarch
2 tsp of sugar
salt and pepper to taste
1/2 cup of "e-v-o-o" as Rachel Ray says (extra virgin olive oil)

Fill skillet with oil and brown the following: steak, onions and peppers.

Don't cook meat and vegetables fully, just brown. Once you have browned these, pour all contents of the skillet into crock pot.

Add Sugar, salt, pepper and about 3/4 c of soy sauce, cover with lid and cook on low for 6-8 hours.

Just before serving, add corn starch to the hot liquid and stir until it becomes thick. Also, you may need to add some more soy sauce depending on your taste preference.

Serve over white or brown rice.

This is so yummy. I served it with a green salad and corn on the cob. Try it for a quick supper!

This sounds great! TFS ... I was a little 'ill' that my slaw was too strong last night. It was perfect the day before. Guess the celery flavor came alive and 'grew' overnight. As a matter of fact, I used less than the recipe called for; it's never been that strong before! But, so far, no fatalities. Guess it could have been worse, huh?

Have a great time on your trip. Talk to you later!

I don't do much cooking in the crockpot, but it sounds like I should try more things with them. Give us some more recipes!!

I love crock pots also, but I only have one (lol). I don't care for cooking at all, so crock pots are my best friends!
